Heritage & Distillery

Oyester 44 occupies a distinctive niche in the vodka landscape — a spirit specifically designed to pair with seafood, infused with a subtle oyster extract and filtered with seawater. The concept might sound gimmicky, but the execution is anything but. At 44% ABV and presented in an elegant 50cl bottle, this is a vodka that takes its maritime identity seriously and delivers a drinking experience that genuinely complements shellfish, raw fish, and coastal cuisine in a way that conventional vodkas cannot.

Tasting Notes

The nose is clean and briny — sea spray and a subtle oyster mineral note that is savoury rather than fishy, accompanied by fresh citrus brightness. On the palate, the vodka is smooth and clean with a distinctive salinity that provides structure, mineral depth, hints of lemon zest, and a savoury umami quality that is unexpectedly refined and deeply appealing. The 44% ABV gives the spirit backbone and presence. The finish is medium with lingering sea salt, clean mineral character, and a crisp, dry close.

The Serve

The obvious serve is a Dirty Martini — and Oyester 44 makes one of the finest this reviewer has encountered, the natural salinity working in harmony with olive brine rather than competing with it. Served ice-cold alongside a dozen oysters, it is close to perfection. A simple pour over ice with a squeeze of lemon and a splash of tonic is also highly effective.

Verdict

At seven out of ten, Oyester 44 is a vodka of genuine originality and carefully considered execution. Its niche positioning — a maritime vodka for seafood pairing — might limit its appeal for everyday drinking, but within that niche it is close to definitive. A fascinating addition to the craft vodka landscape and a must-try for seafood enthusiasts.
