Tasting Notes

Nose

Powerful juniper with liquorice root and grapefruit — tart red berries, coniferous forest character, the bilberry adding a wild berry dimension, medium to full-bodied aroma

Palate

Piney juniper with coriander and citrus zest — burst of white pepper adding length, bilberry providing subtle sweetness without cloying, cardamom warmth, the Finnish spring water creating remarkable clarity, vibrant and warming

Finish

Dry and warm — juniper and bilberry lingering together, white pepper extending, pine needle character, the wild Arctic berries having the last word, clean and long

Created in 2017 by master distiller Arko Ryynänen and Michelin-starred chef Jaakko Sorsa in Ilomantsi, a village on Finland's eastern border. Wild Arctic bilberries — smaller, darker and more intense than cultivated blueberries — are combined with juniper, cardamom and liquorice root using fresh Finnish spring water. Double Gold and Spirit of the Year 2018 at World Spirits Awards. Dry, warm, with coniferous forest character and a subtle berry sweetness.
