Very fresh citrus initially — followed by juniper, hints of savoury saltiness from the seaweed, clean volcanic mineral quality

Palate

Fresh citrus and classic juniper — sharp warm cassia and ginger spices, mellowed by buckwheat's gentle nuttiness, kombu seaweed adding umami depth, sea buckthorn providing tart brightness

Finish

Peppery spices from tail pepper — long-lasting, the volcanic water's mineral quality evident, savoury and complex
