Tasting Notes

Nose

Citrus-driven — triple citrus of orange, lime, and lemon, juniper underneath, pine needle freshness from the Highland forest

Palate

Citrus-forward with spice — the organic barley base providing a grainy richness absent from neutral-spirit gins, cardamom and black pepper warmth, meadowsweet adding floral Highland character, aniseed depth

Finish

Spicy and warming — black pepper and cardamom persisting, pine needle freshness, the 45.7% providing authority and presence

Expert Review

7/10

From the Highland whisky distillery in Dornoch — a series of experimental gin batches using organic floor-malted Odyssey barley as the base. Eleven botanicals including meadowsweet and Scots pine needles from the surrounding Highland landscape. Citrus-driven with a spicy finish at 45.7%.
