Juniper forward with fennel and lavender — pungent thyme, white sage and coriander with pink grapefruit rind

Palate

Herbaceous sage, lemon and thyme — sweet marshmallow initially, then bulbous thyme with woody savouriness, citrus peel roundness, remarkably smooth at 47%

Finish

Chewy and herbal backed by juniper — warm and complex without excessive spice, misleadingly tame for the strength
