Nose

Spicier than standard Pickering's with strong fennel, clear clove, cardamom and cinnamon in the background — warm and aromatic

Palate

Luscious and thick, with chewy anise and fennel dominating, clear juniper with lemon zest and coriander, almost mince pie-like cinnamon, clove and fruit character

Finish

Cardamom, coriander, clove and cinnamon spice leading to a crisp refreshing long finish — festively sweet with a crackle of peppery juniper on the tail
