Tasting Notes

Nose

Rich juniper with lavender — well-balanced and flowery, the potato base adding a subtle creamy richness that grain cannot provide, clean and inviting

Palate

Fabulously clean and fresh — piney juniper, zesty lemon, soapy lavender, coriander and cracked black pepper, very spicy with earthy coriander and ginger, bright lemon appearing mid-palate, the potato base creating a smooth, rounded mouthfeel

Finish

Warm and spicy — ginger and cinnamon lingering, juniper persisting, the potato base providing a smoothness and body that carries the botanicals longer, clean and composed at 47%

Made from potatoes grown in the volcanic soils of the Eifel region — the low mountain range in western Germany bordering Belgium and Luxembourg. The potatoes are mashed, fermented and triple-distilled under master distiller Holger Bolchers: twice in a continuous still, once in a pot still, producing a more characterful base than grain. Named after 'Windspiel' — the German word for greyhound — and inspired by Frederick the Great who brought potatoes to Germany. Ten botanicals including juniper, lavender, ginger and cinnamon.
