Copalli operates from a single estate in the heart of the Belizean rainforest, using only three ingredients: sugar cane, water, and yeast. The cane juice approach (rather than molasses) gives it an agricole-like freshness, while resting in bourbon barrels adds vanilla and spice. At 44%, it's bottled at a strength that shows the oak influence clearly.
